1200 grams young potatoes (small)
300 milliliters water
150 grams coarse salt
For the sauce
75 grams white bread (diced)
2 Tbsps Red wine vinegar
2 Tbsps warm water
2 garlic cloves
2 red chili peppers
2 Tbsps ground paprika
½ tsp Caraway
½ tsp oregano
150 milliliters vegetable oil

Preparation steps

Put the water in a saucepan and bring to a boil, add the salt into it, dissolve and put with the potatoes in a baking dish. Cover the baking dish and place in a preheated oven at 200°C to cook for about 60-70 min.

Mix the white bread cubes with water and vinegar, soak about 10 minutes, set aside. Peel the garlic and finely chop. Halve chile, optionally seed then finely dice.

Finely mix the bread-vinegar mixture with the paprika, oregano and caraway in a blender. Slowly add oil while continuing to mix until a creamy sauce is created. Add the garlic and chile pieces, mix in some hot water if needed, season to taste. Remove the potatoes from the oven and serve with the sauce and garnished with oregano.
