1 Tbsp Whipped cream
1 Tbsp lemon juice

Preparation steps

Place oval cookie cutter (about 10 cm in length) (aprroximately 4 inch) onto a lined with parchment paper baking tray and spread thin, even layer of cheese inside. Remove cutter and cut out 15 circles with a cookie cutter. Bake in preheated oven at 200°C (approximately 400°F) for about 5 minutes or until cheese melts and is golden brown. Remove from oven and cool slightly. Place cheese waffles on a wire rack and cool completely.

For hedgehogs: Rinse and dry scallions, chop finely. Combine cream cheese with cream and lemon juice and season with salt and pepper. With two teaspoons (dip in water occasionally) form 15 little hedgehogs. Rinse chives, shake dry and cut diagonally in 4-5 cm (approximately 1.5-2 inch) long strips. Insert chive strips into hedgehogs as needles and make eyes and nose out of peppercorns. Top each cheese waffle with a hedgehog and serve.
