400 grams Napa cabbage
4 stalks Celery
2 tart Apple
1 organic lemon (juice)
2 Oranges
salt
freshly ground peppers
2 Tbsps sunflower oil
50 grams Crème fraiche
3 Tbsps Whipped cream
2 slices Whole Wheat Toast
1 Tbsp butter
1 garlic clove
1 rosemary
3 Tbsps parsley (for garnish)

Preparation steps

Rinse cabbage, trim and cut crosswise into strips. Rinse celery, trim and cut diagonally into 10 cm (approximately 4 inch) long pieces. Rinse apples, quarter, remove core and cut into wedges. Sprinkle apple slices with a little lemon juice.

Peel oranges with a sharp knife, remove all white skins and cut out segments. Collect orange juice that is created during the cutting process. In a bowl mix orange juice, remaining lemon juice, oil, crème fraîche and cream and season with salt and pepper.

Cut slices of toast into cubes and fry in a pan with hot butter until golden brown. Add peeled clove of garlic and a sprig of rosemary to the pan. Remove and let rest on paper towel. Divide the salad ingredients between serving bowls and drizzle with salad dressing. Serve with parsley and croutons.
