Preparation steps
1.
For the fruit salad: With a sharp knife, cut off peel and bitter white pith from oranges. Working over a bowl to catch the juices, cut between membranes to remove whole segments. Place segments in the bowl.
2.
Quarter apple, remove cores, and cut into thin slices. Place apples in bowl with orange segments.
3.
Halve papaya, scoop out seeds with a spoon, peel fruit and cut into cubes. Add to the bowl of fruit.
4.
Halve figs and cut into wedges. Add to fruit bowl and gently combine. Divide fruit among four glasses and chill.
5.
For the croutons: Melt butter in a pan. Cut cake slices into cubes and swirl in butter until lightly browned. Sprinkle with sugar and cook until caramelized. Just before serving, sprinkle fruit salad with croutons.
