200 grams Kale (without thick stems)
1 scallion

Preparation steps

1.

Cook the potatoes in boiling salted water. Drain and leave to cool. Then peel and cut into small pieces. Rinse the kale and blanch in salted water for 8–10 minutes. Rinse with cold water, drain, and coarsely chop. Rinse and finely chop the scallion.

Sauté the potatoes in the butter, smashing down about a third of them. Add the kale and turn occasionally to brown the mixture. Season with salt and pepper. Whisk the egg with the cream and pour over the vegetables. Stir until set.
