300 gramsBroad bean (fresh or frozen)
Salt
2Garlic clove
2 tablespoonswhite Balsamic vinegar
1 tablespoonLemon juice
1 teaspoonHoney
6 slicesCiabatta
5 tablespoonsOlive oil
2 tablespoonsfreshly chopped Mint
freshly groun Pepper
freshly grated Parmesan (for garnish)

Directions

1 Blanch fava beans in boiling salted water for about 5 minutes and drain. Peel and finely chop garlic. Mix together garlic with oil, vinegar, lemon juice, and honey. Let sit at room temperature.
2 Preheat the broiler.
3 Cut bread into slices and toast under the broiler until golden brown on both sides, about 1-2 minutes.
4 Mix together fava beans, vinaigrette, and mint. Season with salt and pepper. Spoon the fava bean mixture onto toasted bread and serve garnished with Parmesan.
