- 3 shallots (finely chopped)
- 18 ozs Broad bean
- 1 ½ liters vegetable stock
- 1 Tbsp Crème fraiche
- To garnish
- 6 slices crisply fried Bacon
- 3 Tbsps Crème fraiche

Preparation steps
1.
Heat the oil in a large pan and cook the shallots for 10 minutes until softened.
2.
Add the broad beans and cook for 2 minutes. Add the stock and bring to a boil. Simmer gently for 20 minutes until the beans are tender.
3.
Add the creme fraiche and cool slightly.
4.
Transfer the soup in batches to a blender or food processor and blend until smooth. Return to the pan and reheat gently.
5.
Pour into serving bowls and add a swirl of creme fraiche. Crumble over the bacon.
