Ingredients

For the crêpes
1 egg
cup flour
2 Tbsps melted butter
cup milk
2 Tbsps Chives
butter (for frying)
For the topping
1 ⅛ cups cream cheese
1 dash lemon juice
2 Tbsps Chives
1 tsp Horseradish
7 ozs smoked Salmon
cilantro (to garnish)

Preparation steps

1.
To make the crêpes, mix together the flour, butter and milk with a pinch of salt. Cover and leave to rest for around 10 minutes.
2.
Mix together the cream cheese, lemon juice, chives and the horseradish. Season with ground black pepper.
3.
Stir the chives into the crêpe batter and stir well. Fry 4 crêpe from the batter in a hot pan in a little butter.
4.
Arrange the crêpes on plates and spread with a little of the cream cheese mixture. Top with the smoked salmon and serve the remaining cream on the side. Serve garnished with a sprig of chives.
