Preparation steps

1.

Rinse the broccoli, trim and cut into small florets.

Cook in boiling salted water for 5 minutes then drain. 

3.

Reserve some florets for garnish. Puree the remaining broccoli. Gradually add the cream and eggs. Season with salt, pepper and nutmeg. Butter the ramekins and fill with broccoli mixture. Bake in a hot water bath in the oven at 180°C (approximately 350°F) for 20-25 minutes. Serve immediately garnished with broccoli florets.
