1 kilogram broad Beans (alternatively 300 g frozen)
salt
1 carrot
100 grams shallots
2 garlic cloves
40 grams streaky, smoked Bacon
2 Tbsps olive oil
white freshly ground pepper
1 sm cup Basil
8 slices Toast
100 grams grated Parmesan
4 Tbsps Whipped cream

Preparation steps

Rinse the broad beans. Blanch in a pot of salted water for 3-4 minutes. Drain and rinse with cold water. Peel the carrot and cut into thin slices. Peel and finely dice the shallots and garlic.

Cut the bacon into cubes and cook in a skillet until crispy. Remove to a plate. Heat the oil in the skillet. Add the shallots and cook until translucent. Stir in the broad beans and carrots, and cook for 5-8 minutes. Season with salt and pepper to taste. Rinse the basil, shake dry, pluck leaves and finely chop. Stir the basil into the broad bean mixture.

Line a baking sheet with aluminum foil. Place the bread on the baking sheet. Sprinkle with the Parmesan and pour the cream on top. Toast under the oven broiler until golden. Serve the broad beans with the toast. Garnish with the bacon.
