- 3 Tbsps butter
- 1 small onion (finely chopped)
- 3 Tbsps all-purpose flour
- ½ tsp salt
- ¼ tsp freshly ground Black pepper
- ¾ tsp mustard powder
- ¾ cup milk
- 4 hard-boiled eggs (chopped)
- 8 slices cooked Bacon (chopped)
- 2 Tbsps canned Sweet corn
- 1 Tbsp snipped Chives
- To coat
- 1 egg (beaten)
- 2 Tbsps water
- 1 cup dry breadcrumbs
- Oil (for deep frying)
- To garnish
- Watercress

Preparation steps
1.
Heat the butter in a pan and cook the onion for about 2 minutes, until tender.

Stir in the flour, salt, pepper, and dry mustard. Heat until bubbling, stirring.
3.
Gradually add the milk, stirring constantly. Cook until the mixture forms a ball. Remove from the heat and stir in the chopped eggs, bacon, sweetcorn and chives. Chill for 1 hour.

Divide the mixture into 8-10 equal portions and shape into croquettes.
5.
Beat the egg with the water.
6.
Roll the croquettes in the breadcrumbs, dip into the egg, and roll again in crumbs.
7.
Heat the oil in a deep pan to about 170°C | 325°F and fry the croquettes, a few at a time for 7-8 minutes until golden. Drain on absorbent kitchen paper.
8.
Serve garnished with watercress.
