- For the aioli
- 4 garlic cloves
- 2 egg yolks
- salt
- white peppers
- 200 milliliters olive oil
- 1 Tbsp Lime juice
- 1 generous pinch grated Lime zest
- 1 Tbsp chopped cilantro
- For the fish fillet
- 4 Wolf fish fillets (or other fish fillets)
- Pastry flour
- 1 egg
- breadcrumbs
- 4 Tbsps vegetable oil
- 1 Tbsp butter
- salt

Preparation steps

For the aioli: peel garlic and squeeze through the garlic press into a bowl. Add egg yolks, season with salt and pepper and mix well. Add oilve oil, lime juice and zest gradually, whisk until creamy. Add cilantro and mix well. Season with salt and pepper to taste and refrigerate, covered.

For the fish: rinse fish fillets and pat dry. Dip into a beaten egg and coat with breadcrumbs, pressing firmly. Heat oil and butter in a large frying pan and cook fish fillets until golden brown on both sides. Season with salt and serve with aioli and french fries, if desired.
