- 1 Cedar board
- 2 shallots (diced)
- 2 cloves garlic cloves (finely chopped)
- 2 scallions (finely chopped)
- 2 sprigs Dill (finely chopped)
- ½ Lime (juice)
- 1 Tbsp Maple syrup
- 2 Tbsps olive oil
- salt
- freshly ground Black pepper
- 4 fresh Salmon fillet
- To garnish

Preparation steps
1.
Soften the platter in cold water for at least 1 hour.
2.
Place all the chopped ingredients in a bowl and stir in the lime juice, syrup and the olive oil. Season with salt and ground black pepper. Spread the marinade generously onto the salmon fillets and leave to stand for 1 hour.
3.
Heat the grill and place the platter on the rack until it begins to smoke. Place the fish on the platter and grill for 10-14 minutes until cooked to your liking.
4.
Garnish with dill. Serve the fish from the cedar wood platter.
