- For the chicken and dip
- 4 Chicken breasts
- 1 tsp ginger (freshly grated)
- lemons (juice)
- Dip
- 100 grams Yogurt (0.1% fat)
- 100 grams Whipped cream
- 2 Tbsps chopped Basil
- 2 Tbsps chopped parsley
- For the breading and garnish
- 1 Radicchio
- 2 eggs (beaten)
- 3 Tbsps Pastry flour
- 6 Tbsps olive oil
- 6 Tbsps Cornmeal
- 3 Tbsps balsamic vinegar
- salt

Preparation steps
1.
For the chicken and dip, pound chicken breasts slightly flat.

Mix ginger with chile pepper and lemon juice (up to 1 tablespoon of juice). Rub over chicken and and allow to marinate for about 10 minutes.

Stir yogurt with creme fraiche, 1 tablespoon lemon juice and herbs until smooth. Season with salt and chile pepper.

For the breading and garnish, rinse radicchio, remove the stalk and cut into fine strips. Divide between 4 plates.

Turn chicken in flour, dip in beaten eggs and coat with cornmeal. Fry in a pan in hot oil until golden brown, about 4 minutes per side. Drain on paper towels and season with salt and pepper.
6.
Drizzle radicchio with vinegar, arrange sliced chicken on top and serve with the yogurt dip.
