Brazilian Meatloaf with Mozzarella and Ham

- 2 stale White rolls
- 1 onion
- 2 garlic cloves
- 2 stems parsley
- 2 tsps butter
- 500 grams ground pork
- 3 eggs
- salt
- freshly ground peppers
- 300 grams Mozzarella
- 150 grams cooked ham (sliced)
- 50 grams hot Fat (butter or vegetable oil)
- 4 scallions
Preparation steps
Preheat the oven to 200°C (approximately 350°F).
Soak roll in water.
Peel and finely chop onion and garlic. Rinse parsley, remove stems and finely chop leaves. Heat butter in a small pan and sauté onion and garlic until soft. Remove from heat and stir in parsley.
In a bowl, mix ground pork, onion and garlic, eggs and roll (squeezed to remove excess water). Season with salt and pepper. Mix well.
Line a baking sheet with parchment paper. Cut the mozzarella into slices. Sprinkle another sheet of parchment paper with water, then spread with ground meat mixture. Lay ham slices on top of meat mixture, then cover ham with mozzarella slices. Using the parchment paper, shape into a roll and slide onto the lined baking sheet. Discard paper used to shape meatloaf. Drizzle loaf with hot oil and bake 60-80 minutes.
Rinse scallions, shake dry and cut into thin rings.
Cut the meatloaf into slices and serve garnished with the scallions.
