- ¼ cup olive oil
- 8 Chicken thigh
- 2 red peppers (chopped)
- 2 green peppers (chopped)
- 1 medium onion (finely chopped)
- 1 cup Bayonne ham (cubed)
- ¼ cup sherry
- 1 ⅔ cups chicken stock
- 1 ¼ cups white Long grain rice (cooked as per package instructions)
- 1 Tbsp parsley (finely chopped)

Preparation steps
1.
In a large heatproof casserole dish, heat the olive oil over a medium-high heat and sear the chicken thighs until golden all over. Remove and drain to one side.
2.
Add the onion to the dish and fry for 4-5 minutes, stirring occasionally.
3.
Add the chopped peppers and ham and cook for a further 3-4 minutes.

Deglaze the pan with the sherry, stirring the base and sides well to dissolve any residue.
5.
Add the chicken thighs back to the dish and add the chicken stock. Bring to the boil.
6.
Cover the dish and lower to a simmer, cooking the chicken gently for 30-40 minutes until cooked and tender.
7.
Check for seasoning, garnish with chopped parsley and serve with the rice.
