Braised Chicken with Honey and Figs

- 1 chicken (about 1.2 kg)
- ½ bunch cilantro
- 1 garlic clove
- 2 onions
- 2 Tbsps butter
- 2 Tbsps olive oil
- 4 Saffron
- 1 tsp freshly grated ginger
- 1 Cinnamon stick
- freshly ground peppers
- salt
- 600 grams fresh Figs
- 1 Tbsp liquid Wild flower honey
Preparation steps
Rinse the chicken inside and out, dry with paper towels and cut into 10 pieces.
Rinse the cilantro leaves and shake dry. Finely chop the leaves. Peel garlic and onions and finely chop both.
Heat 1 tablespoon butter and olive oil in a saucepan. Add pieces of chicken with the cilantro and garlic and sear over high heat for 5 minutes.
Add onions, saffron, ginger and cinnamon and season with pepper. Pour in 250 ml (approximately 1 cup) of water, cover and cook over medium heat for 30-40 minutes. Then remove lid and continue to cook until the sauce has thickened, 10-15 minutes, stirring occasionally. Season with salt and pepper.
About 10 minutes before the end of cooking time, gently wipe the figs clean and halve. In a pan, heat the remaining butter. Add figs and honey and cook over low heat until carmelized, about 8 minutes. Arrange the chicken on a serving dish and cover with the sauce. Serve with fresh white bread, if desired.
