- 10 cups shelled Broad bean (cooked, skins removed)
- 1 small Red onion (peeled and chopped)
- ⅔ cup sliced smoked Pancetta (or smoked streaky bacon)
- 1 Tbsp Chives (chopped)
- 1 Tbsp olive oil
- ½ lemon (juice only)
- salt
- freshly ground Black pepper
Preparation steps

Preheat grill to its highest setting for 10 minutes and then place the pancetta or bacon on a grill pan and grill it a few inches from the heat for 10 minutes.

To make the salad, mix the broad beans, red onion and chives in a bowl.

Drizzle over the olive oil and lemon juice and then add the salt and freshly ground black pepper.
4.
Toss together with the pancetta and then transfer to a serving plate.
