- 3 Tbsps olive oil
- 2 cups onions (finely chopped)
- 5 garlic cloves (finely chopped)
- 4 cups fresh Broad bean (shelled)
- ⅜ cup chicken stock
- 1 dried Savory (stripped and finely chopped)
- ½ cup Parmesan (grated)
- ½ cup Crème fraiche
- lemon juice
- White Bread
- extra virgin olive oil
- grated Parmesan (to serve)
Preparation steps

Heat the oil in a pot and fry the onions and garlic. Add the beans and quench with the chicken stock. Cover and cook for 30-40 minutes until the beans are soft. If necessary add some more stock.

Towards the end of the cooking time remove 1/3 of the beans and puree the rest. Replace the whole beans in the puree and stir in the savory, Parmesan and the creme fraiche. Season with salt, ground black pepper and a dash of lemon juice.

Drizzle the bread with olive oil and toast in a grill pan. Season the bean dip again, transfer to a bowl, sprinkle with ground black pepper and drizzle with olive oil. Serve the dip with the toast and the grated Parmesan.
