18 ozs Broad bean
3 ½ ozs Bacon (chopped)
2 shallots (finely chopped)
salt
peppers
1 mint

Preparation steps

1.
Cook the broad beans in salted boiling water for 2 minutes, drain and remove the skins.
2.
Fry the bacon in a large dry frying pan until the fat starts to run, increase the heat and cook until browned.
3.
Add the shallots and cook for 2-3 minutes. Add the broad beans and heat through.
4.
Season to taste with salt and pepper. Tear the mint leaves and stir into the beans.
