- 21 ozs ground Beef (chuck, round or sirloin)
- 2 cloves garlic cloves (peeled and finely chopped)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 fresh egg (beaten)
- 2 Tbsps olive oil (plus extra for grill grate)
- 1 large Red onion (peeled and sliced)
- 4 Burger buns (or kaiser rolls)
- 2 Tbsps melted butter
- 1 ¾ cups Blue cheese (roughly crumbled)
- 1 handful Arugula (rinsed and dried)
Preparation steps

In a large bowl, combine the ground beef and garlic. Season to taste with salt and pepper. Add the beaten egg and thoroughly mix. Divide the ground beef into 4 portions. Shape each portion into a thick patty. Set aside.

Heat the oil in a deep skillet set over medium heat. Add the onions and gently saute, stirring frequently, until just tender. Set aside.

Prepare the grill for direct grilling and preheat to high heat. When ready to cook brush the grill grate with oil.

Place the burgers on the hot grill grate. Grill the burgers until cooked through, about 5 to 7 minutes per side for medium. To check for doneness, insert an instant-read thermometer through the side of the burger until you reach the center. The internal temperature should be at least 160º F.

Brush the hamburger buns with melted butter and toast on the grill for 30 to 45 seconds, or until golden brown.

To assemble the burgers: Place a burger on the bottom half of each bun. Top with blue cheese, arugula, and sauteed onion. Cover each burger with the top half of each bun. Serve.
