- For the cupcakes
- ½ cup butter
- ½ cup superfine caster sugar
- ⅓ cup Almond flour
- 2 Tbsps Elderflower liqueur
- 2 large eggs (beaten)
- ¾ cup self-rising flour (sifted)
- For the lemon buttercream
- 1 cup unsalted butter
- 4 cups powdered sugar
- 1 tsp lemon juice
- 5 tsps Elderflower liqueur

Preparation steps
1.
For the cupcakes: Heat the oven to 350°F. Place paper cases in a 12 part muffin tin.

Beat the butter and sugar in a mixing bowl until light and fluffy. Stir in the ground almonds and elderflower cordial.
3.
Beat in the eggs until blended, then stir in the flour until combined.
4.
Spoon into the paper cases and bake for 15-20 minutes until risen and firm to the touch. Remove from the tin and place on a wire rack to cool completely.
5.
For the buttercream: beat the butter until very soft. Gradually sift in the icing sugar, beating until smooth. Add the lemon juice and cordial slowly, beating constantly until blended.
6.
Spoon into a piping bag with a fine flower petal tip.
7.
Pipe onto the cakes to cover completely.
