Ingredients
28 ozs Tomatoes
1 garlic clove
1 oz sun-dried Tomatoes (in oil)
2 Tbsps Vodka (or gin)
1 Tbsp lemon juice
1 tsp sugar
1 egg white
salt
freshly ground peppers
2 Tbsps Shelled pistachio

Preparation steps

Blanch tomatoes in boiling water, then rinse with cold water, peel, quarter and core. In a blender, combine tomatoes with peeled garlic, sun-dried tomatoes and 1 tablespoon of their oil, vodka or gin, lemon juice, and sugar. Blend until smooth. Beat egg white until stiff and fold into the tomato puree. Season well with salt and pepper and pour into 8-10 small ramekins. Freeze about 4 hours. After 1-2 hours, insert a small wooden stick into each.

Ten minutes before serving, remove popsicles from the freezer and let thaw slightly. Finely chop pistachios. Loosen popsicles from molds and dip in pistachios. Serve immediately.
