- 2 Apple (peeled, cored and diced)
- ⅔ cup butter
- 2 Tbsps lemon juice
- ⅜ cup cream
- 4 cups floury potatoes (peeled and diced)
- Nutmeg
- 6 onions (cut into rings)
- 2 Tbsps parsley (roughly chopped)
- ½ Baguette (diced)
- 2 cups Black pudding (cut into 12 slices)

Preparation steps
1.
Fry the apples in 1 tbsp hot butter. Drizzle with the lemon juice and add a little cream. Add the potatoes, season with salt and nutmeg, cover and cook for around 25 minutes until soft.
2.
Slowly fry the onions in 2 tbsp butter for around 10 minutes until soft. Add half of the apple and potato mixture and 1 tbsp butter and mash well. If necessary add some more hot cream and season to taste.

Add the parsley to the remaining onions and season with salt and ground black pepper.
4.
Toast the baguette in a hot pan in 2 tbsp butter until golden. Pat dry with kitchen paper.
5.
Fry the black pudding in the remaining butter on both sides for 1-2 minutes until brown.
6.
Transfer the mash to small dishes and place the black pudding, bread and onions on top. Ideal served as an appetiser.
