- 24 ripe Cherry tomatoes
- 1 cup soft Goat cheese
- 3 Tbsps single cream
- 3 Tbsps toasted Pine nuts
- 4 Tbsps finely chopped Basil
- cayenne pepper

Preparation steps
1.
Using a small, sharp knife, remove the tops from the cherry tomatoes, and reserve for serving.
2.
Remove the seeds from the tomatoes using a teaspoon. Trim the bases of the tomatoes so they sit flat.
3.
Blend the goat's cheese, single cream, toasted pine nuts and chopped basil leaves, then season.
4.
Spoon the cheese mixture inside each tomato and sprinkle with cayenne. Replace the reserved lids and serve.
