2 egg whites
1 packet Bourbon vanilla powder
4 egg yolks
2 Tbsps sugar
2 Tbsps ground Hazelnuts
250 grams Quark (curds)
1 organic lemon (zested and juiced)
500 grams mixed Berry (such as raspberries, blackberries, currants)
butter (for the mold)

Preparation steps

1.

Beat egg whites until stiff and sprinkle in vanilla sugar.

2.

Combine egg yolks with sugar, nuts, quark, lemon zest and juice until smooth, then fold in beaten egg whites gently.

3.

Add mixture to a buttered baking dish.

4.

Rinse berries, remove stems, drain and pat dry. Spread berries over quark layer. Bake in preheated oven at 180°C (approximately 350°F) for about 30 minutes. Serve immediately in dish.
