- 2 Tbsps olive oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 3 ½ ozs Zucchini (sliced)
- 3 ½ ozs button Mushrooms (sliced)
- 1 bay leaf
- 3 ½ ozs carrots (sliced)
- 3 ½ ozs Celeriac (diced)
- 4 cups vegetable stock
- 7 ozs Savoy cabbage (leaves chopped)
- 9 ozs Tomatoes (skinned & diced)
- 2 Tbsps snipped Basil
- 2 Tbsps chopped parsley
- 2 sprigs oregano
- salt
- peppers
- ½ cup grated Parmesan

Preparation steps
1.
Heat the oil in a large pan and gently cook the onion and garlic until translucent.
2.
Add the courgettes, mushrooms, bay leaf, carrots and celeriac, cover and cook for 5 minutes.
3.
Add the stock and cabbage and simmer for a further 4 minutes.
4.
Add the tomatoes and herbs and simmer for 5 minutes. Season to taste with salt and pepper and sprinkle with Parmesan.
5.
Garnish with the bay leaf, oregano and parsley
