2 tablespoons olive oil
1 onion (finely chopped)
2 cloves garlic (finely chopped)
3 ½ ounces zucchini (sliced)
3 ½ ounces button Mushrooms (sliced)
1 bay leaf
3 ½ ounces carrots (sliced)
3 ½ ounces Celeriac (diced)
4 cups vegetable stock
7 ounces Savoy cabbage (leaves chopped)
9 ounces tomatoes (skinned & diced)
2 tablespoons snipped Basil
2 tablespoons chopped parsley
2 sprigs oregano
salt

½ cup grated Parmesan
To garnish
1 bay leaf

Preparation steps

1.
Heat the oil in a large pan and gently cook the onion and garlic until translucent.
2.
Add the courgettes, mushrooms, bay leaf, carrots and celeriac, cover and cook for 5 minutes.
3.
Add the stock and cabbage and simmer for a further 4 minutes.
4.
Add the tomatoes and herbs and simmer for 5 minutes. Season to taste with salt and pepper and sprinkle with Parmesan.
5.
Garnish with the bay leaf, oregano and parsley
