600 grams mixed Berry (such as strawberries and red currants)
200 grams Cherries
1 lemon (juiced)
2 Tbsps sugar
250 milliliters Apple juice
1 Tbsp cornstarch
50 grams Dark chocolate
2 sprigs mint
150 milliliters Whipped cream
mint (for garnish)

Preparation steps

Rinse, trim and drain the berries. Cut the strawberries in half, then quarter them, depending on the size. Rinse the cherries, remove the pits and drain.

Boil the lemon juice with the sugar and apple juice. Stir the cornstarch with 2 tablespoons of water until smooth and mix in the lemon and apple juice. Let simmer while stirring. Add the berries and cherries and simmer with continued stirring for 2-3 minutes so the berries begin to fall apart but remain slightly lumpy. Remove from heat and let cool.

Chop the chocolate finely. Rinse the mint, shake dry, pluck off the leaves and finely chop. Whip the cream, stir in mint and chocolate. Distribute the berry compote in saucers or cups, put the chocolate mint whipped cream on top and serve garnished with mint.
