- 250 milliliters Beet juice
- 250 grams Yogurt (low-fat)
- 500 milliliters Buttermilk
- 1 pinch salt
- 1 pinch powdered sugar
- 1 onion
- 1 Cucumber
- 8 Radish
- 2 Tbsps Beet Greens (chopped)
- 1 Tbsp freshly chopped Dill
- 1 Tbsp Chives (sliced)

Preparation steps
1.
Mix the beet juice with the yogurt and buttermilk. Season to taste with salt and powdered sugar. It still should be slightly sour.
2.
Peel and finely chop the onion. Peel the cucumber and halve lengthwise. Remove the seeds and finely dice. Rinse and trim the radishes, then thinly slice and mix with the onion, cucumber, beet greens, and herbs. Chill for at least 2 hours in the refrigerator. Season to taste with salt before serving.
