Preparation steps

1.

Squeeze the juice from half of a lemon. Puree the yogurt, beet juice, lemon juice, and honey in a blender. 

2.

Rinse the beet greens and pat dry. Pour the drink into 4 glasses, garnish with the beet greens, and serve.
