600 grams Beef fillet (ready to cook, centerpiece)

2 Tbsps vegetable oil
2 sheets Filo dough (about 40 x 50 cm)
1 Tbsp Truffle oil
3 Tbsps Truffle paste
2 Tbsps breadcrumbs
melted butter (for drizzling)
300 grams Snow peas
20 grams butter

Preparation steps

Preheat the oven to 200°C (approximately 390°F). Rinse the meat, pat dry, cut into 4 equal medallions, season with salt and pepper and sear all sides in a hot pan with oil. Remove and set aside. Spread out the filo dough and sprinkle with the truffle oil. Fold in half and cut into 4 squares (each 15 x 15 cm, approximately 6 x 6 inches).

Mix the truffle paste with 2 tablespoons of breadcrumbs. Place a beef medallion on each filo dough square and sprinkle with the truffle paste. Bring the corners of the dough squares upwards to the middle and squeeze, sprinkle the wraps with butter and bake in preheated oven for about 10 minutes.

Meanwhile, rinse and blanch the snow peas for 2 minutes in boiling salted water. Remove, drain well and toss in a pan with melted butter. Season with salt and pepper and place on a warm plate. Place a filo wrap on top and serve immediately.
