For the beef
500 grams kosher Beef fillet (Jewish butcher)
vegetable oil (for cooking)
salt
freshly ground peppers
For the potato cakes
8 mealy Sweet potato
2 eggs
2 Tbsps Pastry flour
1 tsp salt
medium-hot Mustard

Preparation steps

For the potato cakes: Peel, grate and squeeze potatoes. Add remaining potato cake ingredients and mix well. Heat a lot of oil in a pan. Add mixture, tablespoon by tablespoon, to oil and fry until brown. Flip and cook until other side is brown. Add more oil as needed. Remove and drain on paper towels. Season with salt and pepper.

For the beef: Rinse beef and pat dry. Heat oil in a roasting pan. Sear beef on all sides. Reduce heat slightly, cover meat and cook for 10-15 minutes. Season with salt and pepper. Remove beef and slice. Cook pan drippings with 2 tablespoons water.

Plate beef and potato cakes and serve drizzled with pan sauce.
