Beef Stir-Fry with Rice Noodles
Rinse meat, pat dry and cut into wide strips, mix with soy sauce and pepper and marinate for 15 minutes. Rinse peppers, halve, remove seeds and cut into thin strips. Heat oil in a wok, add curry paste, beef, peppers, fish sauce, sugar and a little water and saute, stirring, for 3 minutes.
Cook noodles according to package instructions in boiling water for 3 minutes, drain.
Place lettuce leaves on plates, top with noodles and beef. Sprinkle with finely chopped Kaffir lime leaves and serve.
