- 16 ozs Sirloin steak (sliced)
- 1 onion (sliced)
- 2 large garlic cloves (crushed)
- 1 Tbsp butter
- 1 Tbsp fresh Sage (finely chopped)
- 6 cups mixed Wild mushroom (sliced)
- ½ tsp peppers (cracked)
- 1 Tbsp soy sauce
- 1 cup white wine
- 3 Tbsps flour
- ½ cup fresh parsley (chopped)
- ½ cup good-quality Parmesan (grated)
- ⅓ cup milk
- ⅓ cup cream
- 1 crusty Bread (cut in very thick slices; toasted)

1 Kitchen scale, 1 Teaspoon, 1 Mixing bowl, 1 Wooden spoon, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Plastic wrap, 1 Hand mixer, 1 Rolling pin, 1 Cookie cutter, 1 Baking sheet, 1 Parchment paper, 1 Wire rack, 2 Bowls, 1 Pot, 1 Wooden spoon, 1 Tea strainer, 1 Cookie tin, 1 Paper towel
Preparation steps

Place olive oil in a large sauté pan over medium-high heat, then brown the sirloin on all sides for about 7 minutes. Put beef in a plate and set aside.

Melt butter in the same pan then cook, onions, garlic and sage for 5 minutes, stirring occasionally. Add the mushrooms and pepper and continue cooking until the mushrooms start to cook down and get a bit brown. Add the beef and the soy sauce. Add the flour stirring it well into the beef and mushrooms and then the wine. Stir until sauce starts to bubble and thicken. Add parsley and Parmesan cheese cook and stir 2 minutes more. Remove from heat, stir in milk and cream.

Serve the ragout hot with fresh toasted bread.
