4 Steak fillet (eahc about 150 grams)

1 Tbsp clarified butter
For the salad
400 grams Watercress
8 Radish
4 Tbsps White vinegar
1 Tbsp lemon juice
1 tsp hot Mustard
1 tsp honey
6 Tbsps olive oil

Preparation steps

Preheat the oven to 80 ° C lower and upper heat.

For the steaks: rinse and pat dry steaks. Season with salt, coriander and pepper. Heat butter in a pan and sear meat on both sides. Place in a baking dish and finish cooking in a preheated oven at 80°C (approximately 175°F) for about 15 minutes or until pink inside (depending on thickness of meat). Turn over once during cooking in the oven.

For the salad: rinse and spin dry watercress. Rinse and dry radishes, cut into thin slices. Arrange radishes with watercress on plates. Mix vinegar with lemon juice, mustard, honey and olive oil and season with salt and pepper. Drizzle dressing over salad.

Remove steaks from the oven, let rest briefly and cut into slices. Serve with salad.
