3 Tomatoes
1 shallot
2 Tbsps green, pitted Olives
3 stalks parsley
6 Tbsps olive oil
salt

1 tsp balsamic vinegar
4 small Sirloin steak (each about 120 grams)
250 grams mixed Lettuce (such as Radicchio, oak leaf lettuce, frisee lettuce)
1 Tbsp lemon juice

Preparation steps

1.

Rinse and dry tomatoes, cut into quarters and remove seeds, cut into small cubes. Peel shallot and chop finely.

Drain olives well and chop. Rinse parsley, shake dry and chop. Combine olives with tomatoes, shallot, parsley and 2 tablespoons of olive oil. Season with salt, pepper and vinegar.

Rinse and pat dry meat. Heat large pan and cook meat for 3-4 minutes per side on high heat. Remove from pan, season with salt and pepper on both sides and drizzle each steak with 1 teaspoon of olive oil.

Rinse and spin dry lettuce, mix with remaining oil and season with lemon juice, salt and pepper. Arrange steaks with salad on 4 plates. Place salsa into small bowls and serve alongside steaks.
