Beef and Onion Skewers
ready in 1 hr 55 min.
- 21 ozs Beef fillet (ready to cook)
- ⅛ cup soy sauce
- 6 Tbsps sesame oil
- 1 Tbsp Curry powder
- 2 Fennel bulb (quartered, stalk removed and chopped)
- 1 onion (finely chopped)
- 6 cloves garlic cloves (2 cloves chopped, 4 cloves quartered)
- 3 cloves
- ½ tsp Chili powder
- ½ cup Coconut milk
- ¼ cup vegetable stock
- 1 ½ inches fresh ginger (finely sliced)
Wash the beef and pat dry. Trim and chop into bite-sized pieces.
Make the marinade by mixing the soy sauce, 2 tbsp oil and curry powder. Marinate the meat for approx. 1 hour.
Heat 2 tbsp oil in a wok and fry the fennel quickly. Add the onion, chopped garlic, cloves and chili powder and continue to fry for 2 minutes. Pour on the coconut milk and stock. Cover and simmer over a medium heat for approx. 20 minutes.
Thread the ginger slices, garlic quarters and beef cubes alternately onto wooden skewers. Heat the remaining oil in a pan and fry the skewered meat on all sides.
Place the satay on plates. Check the seasoning of the fennel sauce and serve with the satay.
