250 grams small, white Beans
salt
250 grams Chanterelle (or button mushrooms)
100 grams Arugula
1 onion
3 Tbsps olive oil
freshly ground pepper
1 pinch Cumin
4 thin Veal cutlets (each 50 grams)
4 tsps grainy Mustard
2 small, round, fresh Goat cheese

Preparation steps

1.

Cook beans in lightly salted water for 25-30 minutes, covered.

2.

Rinse, clean and cut larger chanterelles or button mushrooms. Rinse, trim and chop the arugula. Peel onion and dice.

3.

Heat 2 tablespoons of olive oil and and add onion and mushrooms. Cook, stirring frequently, until almost all of the liquid has evaporated. Season with salt, pepper and cumin seed.

Drain beans. Mix with the arugula and mushrooms and season to taste.

5.

Season veal cutlets with salt and pepper and brush with mustard. Fold over and secure with a wooden toothpick. Heat the remaining olive oil and fry cutlets on each side for about 3 minutes.

6.

Halve goat cheese rounds. Remove toothpicks from cutlets and place half of a goat cheese round in each folded cutlet. Brown under the preheated oven broiler, watching carefully. Arrange beans and cutlets on plates and serve.
