- 1 Tbsp Oil
- 1 clove garlic cloves (finely chopped)
- 2 mild, green chili peppers (cut into rings)
- 1 cup Bacon (diced)
- 1 Tbsp Tomato paste
- 4 Tbsps water
- 14 ozs canned red Kidney beans (drained)
- cayenne pepper
- salt
- 4 Tortillas
- 1 cup grated Cheddar cheese

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.
2.
Heat the oil in a frying pan and cook the garlic, chillies and bacon until browned.
3.
Stir in the tomato concentrate and water, followed by the beans and simmer for 2-3 minutes. Season with cayenne pepper and salt.
4.
Spread the bean mixture on the tortillas, cover with grated cheese and fold in half.
5.
Place on the baking tray and bake for about 10 minutes until golden brown.
