150 milliliters dry white wine
1 pinch salt
1 bunch Cress

Preparation steps

1.

Rinse the sage, pat dry and pluck off the leaves.

2.

Separate the eggs. Mix the flour with the egg yolks, wine, and salt until smooth. Let it rest for about 10 minutes.

3.

Whip the egg whites until stiff and fold the egg whites into the batter.

4.

With tongs or tweezers, dip the sage in the egg batter. Fry in hot oil at 170°F (approximately 335°F) in a tall pan for about 1 minutes until golden brown.

5.

Drain on paper towels and serve garnished with sage flowers.
