For the batter, mix the flour with the cocoa in a bowl. Stir together the milk, egg, salt, and sugar, cover with a cloth and allow the batter to rest for 15 minutes, then stir vigorously. Whip the egg whites until not quite stiff and fold into the batter. Heat the frying oil in a pan.

Dip the almonds in portions into the batter, fish out with a fork and drain briefly. Drop gently into the hot oil and fry until golden brown. Drain on paper towels. Sprinkle with cocoa powder and serve.
