Preparation steps

In electric mixing bowl combine flour, salt and sugar. Dissolve yeast in warm water and add to flour mixture. Add oil and mix together until dough is smooth and begins to pull away from sides of bowl. Cover bowl and let sit for about an hour, or until dough has doubled in size.
While dough rises, prepare chicken. Preheat oven to 400° F / 200º C. Season chicken on both sides with salt and pepper and place in a shallow baking dish. Pour 1 cup of barbecue sauce over chicken, turning to coat both sides. Bake for 20 for 25 minutes or until chicken is done. Remove from oven, dice chicken and set aside.
Sprinkle flour over clean work surface. Remove dough from bowl and split into two balls. Roll each ball into a circle, about 12-inches in diameter, place on a greased baking sheet or pizza stone. Poke holes in the dough with a fork.
Spread remaining barbecue sauce evenly over each pizza crust. Top with cheese, chicken, onions and seasoning.
Bake for 15-20 minutes or until edges of crust are golden brown. Sprinkle fresh cilantro on top just before serving.
