Preparation steps

Mix the sugar with the lemon juice and the lemon zest. Peel and slice the bananas. Mix the bananas and the sugar mixture in a pot, set aside, and let infuse for 30 minutes.

Simmer the mixture for 8 minutes, stirring occasionally. Fill prepared, sterilized jars to the brim with the hot jam. Seal tightly, and cool completely.
