3 Chicken breasts (about 600 grams total) (approximately 21 ounces)
150 grams Bacon
Peanut oil (for brushing)
2 garlic cloves
2 cm Galangal (fresh)
1 sprig Lemongrass
2 Tbsps Fish sauce
2 Tbsps Oyster sauce
4 Tbsps soy sauce
150 milliliters Coconut milk
100 milliliters Peanut oil
2 Tbsps brown sugar

1 Tbsp Fish sauce
1 Tbsp Oyster sauce
2 Kaffir lime juice (zested and juiced)
2 Tbsps soy sauce
1 Tbsp brown sugar
1 Red chili pepper
1 Tbsp finely chopped Chinese Chives
Rice (steamed, for serving)

Preparation steps

1.

For the meat: Thinly slice the meat then flatten between 2 sheets of plastic wrap with a meat mallet.

Arrange the bacon over the chicken then skewer onto wooden skewers.

For the marinade: Peel the garlic and galangal and finely chop. Cut the lemongrass into thin rings. Combine the oyster sauce, fish sauce, soy sauce, coconut milk, oil, sugar and pepper. Mix in the garlic, galangal, lemongrass and cilantro, pour over the skewers and marinate for at least 90 minutes.

For the sauce: Combine the fish sauce, oyster sauce, kaffir lime juice, kaffir lime zest, soy sauce and brown sugar. Cut the chile in half, remove the seeds and pith and very finely chop. Mix with the sauce.

Remove the skewers from the marinade and let drain. Place on a preheated grill and cook for about 2 minutes per side, brushing occasionally with a little marinade.

Sprinkle the skewers with Chinese chives and serve with the rice and sauce on serving plates.
