4 Turkey leg (ready to use, about 200 g)

3 organic Oranges
½ bunch parsley
3 scallions
300 milliliters Whipped cream (at least 30% fat)
1 Tbsp medium hot Mustard
100 milliliters chicken stock

Preparation steps

Preheat oven to 200°C (approximately 400°F). Pat dry turkey thighs and season with salt and pepper and place in a buttered baking pan. Peel 2 oranges and remove segments, taking care to remove skin, pith and membrane. Halve remaining orange and squeeze juice into a bowl.

Rinse parsley and scallions, drain and pat dry and finely chop parsley and cut scallions into rings. Mix cream, orange juice, mustard and broth and season with salt and pepper. Stir in parsley and scallion and pour sauce into pan. Place orange segments over turkey and sauce and cook for about 45 minutes in preheated oven. Serve with wild rice.
