Preparation steps

1.

Preheat oven to 200°C convection (approximately 400°F).

2.

Spread out 4 pieces of parchment paper and brush center of each sheet with a little oil. Rinse trout and pat dry.

3.

Rinse orange in hot water, wipe dry and grate zest. Mix orange zest with mustard. Season trout inside and out with salt and pepper, score each side 3 times and insert orange mustard into cuts. Place each trout on a sheet of parchment paper, fold paper together and seal well. Bake in oven about 25 minutes.
