- 4 fresh Salmon fillet (each weighing 250 g)
- 1 tsp lemon juice
- 2 Tbsps clarified butter
- ¼ cup fish stock
- ¾ cup Mozzarella
- ⅔ cup green Olives (stoned)
- 6 Dried Tomatoes (in oil)

Preparation steps

Preheat the oven to 200°C.

Put the clarified butter into a baking dish and put into the hot oven. When the dish is hot, place the salmon fillets in the dish and add the stock. Slice the mozzarella and lay on top of the salmon fillets. Halve the olives, drain and dice the tomatoes and scatter both on top of the mozzarella. Cover with aluminium foil and cook in the oven for about 15 minutes. Serve hot.
