1 kilogram Sweet potato

200 grams Bacon
2 scallions
300 grams Sour cream

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the potatoes and parboil for 15 minutes in salted water. Drain and half lengthwise. Hollow with a teaspoon. Lightly grease a baking sheet with 2-3 tablespoons of oil. Place the potatoes with the cut-side down on the baking sheet. Bake until golden brown for about 25-30 minutes.

In the meantime, cut the bacon into strips and fry in a skillet over medium heat. Rinse and cut spring onions into thin rings. Remove the potatoes with salt and fill it with the bacon. Give each potato with a tablespoon of sour cream and sprinkle with scallions. 

To serve: Season with chili flakes and serve immediately.
