1 cup unsalted butter (scant)
1 cup light brown sugar (scant)
4 eggs
2 cups Whole wheat flour
1 tsp Baking powder
1 pinch salt
1 tsp ground mixed spice
3 cups chopped dried Apricot (no need to soak)
5 Tbsps Orange marmalade
1 Orange (finely grated zest)
2 Tbsps Sunflower seed

Preparation steps

1.
Heat the oven to 160°C (140° fan) 325°F gas 3. Grease a 20cm|8" round cake tin or an 18cm|7" square tin and line the base with non-stick baking paper.
2.
Beat the butter and sugar in a mixing bowl until light and smooth. Beat in the eggs, one at a time, with a spoonful of flour until blended.
3.
Sift the remaining flour, baking powder, salt and spice into the mixture and stir until blended.
4.
Gently fold in the apricots, marmalade and orange zest.
5.
Spoon into the tin and bake for about 1 1/2 hours until a skewer inserted in the centre comes out clean. Sprinkle with sunflower seeds and leave to cool completely in the tin.
