2 Tbsps lemon juice
2 slices ham (e. g. Serrano; finely sliced)
1 shallot (diced)
1 clove garlic cloves (diced)
4 Tbsps olive oil
cup dry white wine
cup orujo Brandy (or grappa)
1 tsp paprika
2 Tbsps breadcrumbs
parsley (to garnish)

Preparation steps

1.
Open and rinse the scallops. Remove the coral and drizzle the scallops with lemon juice. Chop the coral.
2.
Fry the ham, shallot, garlic and coral in 2 tbsp hot oil. Deglaze with the wine and the orujo and eason with salt, ground black pepper and paprika.
3.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.
4.
Place each scallop in a clean shell and place on the baking tray. Add the sauce and sprinkle with bread crumbs. Drizzle with the remaining oil and bake for around 10 minutes. Serve garnished with parsley.
